Honey Facts

Where is your honey produced?

Our hives are nestled across the rolling hills of the South Downs, where bees forage on wildflowers unique to this beautiful national park. Each jar of our honey captures the true flavour of Sussex — raw, unpasteurised, and minimally cold-filtered to preserve its natural enzymes, character, and origin.

To complement our Sussex honey, we migrate select colonies each year to the heather-rich heathlands of the New Forest in Hampshire. There, our bees produce a rare and aromatic heather honey, regarded as one of the finest honeys in Britain.

What is honeycomb, and can you eat it?

Honeycomb is pure, raw honey in its most natural form, sealed in delicate, golden wax cells handcrafted by bees. Our cut comb offers a rich, floral sweetness with a smooth, melt-in-your-mouth texture, making it a luxurious treat that's entirely edible and straight from the hive.

Our cut comb honey is a delicacy: smooth, chewy, and filled with luscious raw honey. You can eat it by the spoonful, spread it on toast, or pair it with cheese and fruit.

What is raw honey?

Raw honey is honey that’s extracted directly from the hive and minimally processed. It’s unheated, unfiltered, and retains all of its natural enzymes, antioxidants, pollen, and nutrients, just as the bees made it. This makes it richer in flavour and health benefits than most store-bought honey.

Why does honey crystallize, and is it still good?

Crystallization is a natural process and a sign of high-quality raw honey. Over time, the glucose in honey separates and forms tiny crystals. It’s perfectly safe to eat and just as delicious—some even prefer the creamy texture! To liquefy it, gently warm the jar in a bowl of warm water.

How should I store honey or honeycomb?

Store honey and honeycomb at room temperature, away from direct sunlight. There’s no need to refrigerate it, cold temperatures can speed up crystallization. Just keep it in a sealed container, and it will stay fresh for a long time (raw honey doesn’t spoil!).

Is your honey pure and natural?

Yes, absolutely. Our honey is 100% pure, raw, and straight from the hive with no additives, no blending, and no artificial processing. We produce every single honey product from our own beehives to ensure our high quality, care and passion goes into everything we do.
